Carambola, (Averrhoa carambola), woody plant of the wood sorrel family (oxalidaceae) and its edible fruit, native to tropical Asia and extensively cultivated in tropical areas. Barely ripe carambola has a verjuicelike sharpness. As it ripens, it acquires notes of pear, melon, and gooseberry, with a balance of flavours that is lightly sweet and sour. The fruit is often consumed raw or as a juice or candied in sugar syrup.
