The West Indian cherry is a small evergreen tree that can grow to 3 metres tall. This plant starts to bear within 4 years and fruits can be seen at intervals throughout the year. It is cultivated for its tart edible fruits which are very rich in vitamin c and are used in preserves and commercial vitamin production. Inside of the cherry, the pulp is juicy with a sweet and tart flavor and consists of three tiny winged edible seeds. Ripe berries are sweeter and juicier than immature, green-skinned ones. For home use, as dessert, the fruits are picked when fully ripe.
